Pancakes

Ingredients:

1/2 over ripe banana

1/2 cup oatmeal

1 egg

3 egg whites

1 tsp cinnamon

How to make:

Blend all ingredients in a small blender or with a hand mixer. Heat pan on medium heat with a small amount of oil or cooking spray. Pour 1/3 of mix into pan and cook until bubbles start to form on pancake. Flip and cook until center is done. Repeat for next 2/3 of mix. *Caution the natural sugar in the banana will burn quickly on high heat*

Top with fresh fruit, syrup, honey, or nut butter.
